Are you planning on having wipers?

If not then you may as well ditch the stalks an fit a simple 2 stage rocker.

There is one for earth - where is your second tab?

Sounds like the horn to me. 2 brown wires going to a floating connector bloc?

Stick your multimeter on and press the horn ;)

I believe they are pins 31 & 31a flat spade terminals

If you look at them closely you'll see that they are stamped 55 and 31.
31 is an earth (Brown) and as far as I can see 55 doesn't have any connection.
I'll have a better look at the book tomorrow when I'm sober.

Yes, make sure at least something on the dashboard (instrument lighting, maybe) comes on when you switch the sidelights on.

Make sure the rear foglight warning light on the dash (or in the switch itself) only lights when the rear foglight is on, and that that is only when you switch it on, AND either the dip or main beams are on, and at no other time.
