i cant %100 tell you what to do but one wire will be a live one will be a ground and the other remaining will be a sensor wire which tells your ecu/switch control the resistance(temperature)

hope that maybe clears something up

Thermostatic swith to control cooling fan not engine thermostat.

Make it switchable or it will run all the time if the switch goes faulty.

The three terminal one is for a 2-speed fan. I suspect it might not be ideal for a 1-speed fan application, as the trigger temperatures may be lower and higher than ideal for a single switch. I just bought a 2-terminal one. Mine is there mostly to plug the hole in the radiator, the ECU will control the radiator fan based on the temp sensor in the thermostat housing.
