I decided I wanted to use the existing cables, so I came up with my own adjusters.
Basically I welded a nut to the tube coming out of the pedel box. Into this was screwed a bolt with a hole drilled through the middle of it for the cable to pass through. I then welded a tube to the head of the bolt to act as a retainer for the end of the existing cable. I also fitted the bolt with an extra nut to act as a lock nut.
