Sounds like a good excuse to finally build that grit blasting cabinet that I have the materials for

Use the engine that will best fit in with your long term plans.

If you are going to keep the engine that you first build with, fit the 2 Litre DOHC.

If you are toying with the idea of going the Zetec route at a later date, fit the CVH, it will be so much easier come swap time
