Having not looked at my car in a while, Something sticks in my brain about turning the trackrod end the other way on the ford hubs but not sure about the mx5 setup.
For good suspension design it should be almost horizontal when sitting in the straight ahead position.
Messing with the steering rack need to be done by a professional.
Just my thoughts but i could be wrong...........
