I'm assuming these are what I need: http://www.strongflexuk.co.uk/mazda/mx5/nb/rear-upper-inner-outer-suspension-bush.html#.Vy3Ep8h4WnO
I know they will have a 8mm hole but I'm assuming I can just run a 12mm drill through it as there's seems to be plenty of metal on the tubes, is there any problems with my plan?

These are made for the job just smaller 'hole'. I've seen them from talon but there £30 and these are £18 delivered. The ones currently fitted are not in bad condotion so it's not worth replacing them for £30 but for £18 I think it's worth it.

been there and tried that with all sorts of trial and error ..
for what its worth imo, on a car known for its handling and the hassle of drilling them I would recommend the extra £12 as money well spent
And I have no connection to Talon just my opinion (learnt the hard way lol)
