Look at the HP rating of the bike you are planning to uses. Generally they are all pretty much the same excpet for the diameter. I am going to use ZX6R carbs on my 1.8 pinto as they should be good for around 110hp. As strange as it sounds go for the smallest you can for the hp you want. The bigger you go the worse the throttle response will be. While that doesn't really matter for a track car it makes a big difference on the road for the sake of 1 or 2 bhp.

I'm using ZX6r on a 2.0l Zetec Terry, running at 170hp - they don't restrict the airflow and the throttle response is fantastic. The only thing is to get them set up professionally, for the sake of £80 its well worth it.

Im on zx6r carbs also as spud is, they are very responsive

Whichever ones you decide on try and get some with a throttle position sensor on then if you want to set up with megajolt you can run a 3d map rather than 2d

Theres a big feature in this months Classic Ford Mag on bike carbs inc Bogg Bros views. 7 pages. + a Zetec powered Cortina on ZX-6R carbs.

I downloaded these drawings of Zetec manifold flanges from somewhere, don't remember where. Hope they will be useful:
