I doubt there would be any problem proving the date of manufacture for the engine
Problems will most likely arise when you try to prove the age & source of your other donor parts !!
In order to qualify for an age related plate, most of the donors parts count towards DVLA's points system for an age related plate.
With no V5 it is likely to prove difficult .... That's not to say it's impossible though
