Twin 40-50 webbers are old school and make a very nice noise but have a habbit of unsetting them selfs by way of vibrations and jolts which you could have alot of in a 7. Can be cheap if you can find a second hand set and buy a refurb kit, be prepered to tow a small fuel bowser though as they be thirsty. They can be used with the pinto dizzy which will save some cash.

Throttle bodies are basicly injected webbers and they tend not to be cheap brand new. Good way to make power using 3d mega squirt which would make the most of them but wether it's worth bolting them to a 40 year engine design is debatable. I've seen old webbers converted with injector ports to act as throttle bodies which may be a cheaper option.

Bike carbs are a cheap way to go with most having 38-40 chokes same as twin webbers and be had on ebay from £40 upwards. Most places with rolling roads are set up to tune car engines with bike carbs, again you could use the pinto dizzy.

If your able to fabricate you own manifold you could make a slimer injection system and make a plenum with a throttle body at one end. I think what it comes down to is how much do you want to spend and how often do want to play with or fix it.
