This keeps coming up so I'll have a go .... you can either make the tunnel narrower or make the chassis wider. You dont need a 125mm wide tunnel for a prop shaft 50mm wide, I've done this and most hatch back sized seats will fit. If money is a concern and you make the chassis wider you could use lobro bolt on shafts and add spacers between the CV joints and the flanges on the diff end. Another way round it is you use near 0 off set rims but they can be pricey.
You also have to consider that there is no standard body work that will fit the back end so you'll have to make that as well.
