Servo

This might be a daft question from a total newbie, but I'm starting to fit my engine and connect everything up and I know I shouldn't be using a brake servo but what happens to the vacum connection from the servo onto the inlet manifold? Should it just be left as is or do I need to try and block up the hole on the manifold?

I am not an expert in any way shape or form but I would say block it up cause you dont want it sucking up any debris into your engine could do some serious damage

Sounds sensible, any ideas on the best way to do it? Would rather avoid the welder if possible..

Block it off otherwise you will have un-metered air.

Plenty of other ways without having to weld.

My old race car all I did was tap some threads and put a big bolt in

Depends which engine and what the outlet currently is.

Cut the hose, find a bolt that fit's the hose, apply ptfe tape or thread lock to bolt thread, screw bolt into pipe, zip tie or jubilee clip it just to be sure.
