I suppose if they are high temp warnings you dont want them set any where near the on/off range of the fan stat, so really the water one would want to be set a few degrees before boiling which would depend on the pressure cap. I reckon for a high temp warning 110 and the oil is happy up to 120ish so set that to 115. any less and the warning lights will keep flashing up . Just my opinion.
